Desired Dough Temperature: The Key to Consistent Sourdough

Achieving Your Target Dough Temperature

Controlling dough temperature is the secret to predictable sourdough baking. When every bake starts at the same dough temperature, bulk fermentation time becomes consistent and you can stop guessing.

The Formula

Water Temp = (Target DDT × 3) − Room Temp − Flour Temp

This “Temperature Balance Formula” assumes three equal-weight factors influence final dough temperature: the water, the flour, and the ambient room.

Example

Target DDT: 77°F, Room: 70°F, Flour: 70°F

Water = (77 × 3) − 70 − 70 = 91°F

Why This Matters

When your dough starts at a consistent temperature, fermentation times become predictable. Two bakes at the same DDT and starter % will finish bulk within 15 minutes of each other — even across seasons.
